Yearling/Premium beef **** – have been raised exclusively on forage. Grass-fed beef cattle are raised primarily on forage, sourced from young cattle this high quality grass fed meat is the lowest in fat of all the classifications we have, fat tends to be a vibrant white and pinkish flesh and Is what you would find in most restaurants as their premium steak tenderness is the highlight of this meat

GRAIN-FED yearling beef ****- Due to the uniformity of the feed, there is a strong consistency in the quality of the product. Grain-Fed Beef has only a marginally higher overall fat content than Grass-Fed cattle. Grain-Fed Cattle also tend to yield a more consistent meat colour, fat colour & can have high levels of marbling.

MSA grain-fed beef *****- (CAB) is a specification-based, branded-beef breed program which was founded in 1978 by Angus cattle producers to increase demand for their breed of cattle, by promoting the impression that Angus cattle have consistent, high-quality beef with superior taste. (MSA= Meat Standards Australia)

2. Medium or fine marbling texture

Wagyu beef *****- Because of the extensive fat marbling, Wagyu beef may look like it's covered in snow. It's also sometimes referred to as "white" beef. Some, who prefer a leaner cut, may find Wagyu beef not worth the trouble or expense because they simply don't like the fat. Much of Wagyu beef is either prepared as steak tartar, or in quick pan searing methods. If you overcook Wagyu beef, you've wasted a lot of money.
